Recipe:
base 420 ml water / 7 g yeast /520 g flour (any flour, this was white and wholemeal) / 2 tsp fine salt / 4 tbsp oil / 2 tbsp sourdough discard (optional)
mix yeast and tepid water, wait 10 mins / mix in 2 tbsp oil, salt and 250 g flour / add in the rest of flour and mix for 3 mins on slow / increase speed for 5 mins / place dough in oiled container for 2 hours / stretch dough out into an oiled sheet / cover and rest until big bubbles form (1 hour-ish)
topping 1/3 jar of passata / 3 minced garlic cloves / 1 tbsp dried oregano / 1 ball of mozzarella, ripped / finely grated cheddar
bake for 20 or so mins @ 250c
